Easy Recipe for Shahi Butter Chicken Preparation

Ingredients

For the Marinade:

500g chicken (boneless or with bone)
1/2 cup yogurt
1 tbsp ginger-garlic paste
1 tsp turmeric
1 tsp red chili powder
1 tsp garam masala
1 tsp coriander powder
Salt
1 tbsp lemon juice
For the Gravy:
2 tbsp butter
1 tbsp oil
2 onions, finely sliced
3 medium tomatoes, pureed
1 tbsp ginger-garlic paste
Cashew nuts, soaked and made into a smooth paste (1/4 cup)
Cream (half cup)
Red chili powder (1 tsp) (to taste)
Turmeric powder (1 tsp)
Coriander powder (1 tsp)
Cumin powder (1 tsp)
Kasturi methi (1/2 tsp)
Garam masala (1 tsp)
Salt to taste
Fresh coriander leaves to garnish

Instructions

Marinate the Chicken

Put the yogurt in a bowl. Add the ginger-garlic paste, turmeric, red chili powder, garam masala, coriander powder, salt, and lemon juice. Mix well and then add the chicken pieces to coat them.
Cover and refrigerate for at least an hour (preferably overnight for better results).

Cook the Chicken

Heat 1 tbsp butter in a pan and pour in all the marinated chicken. Sear it golden brown on both sides and cook it partially (the rest will cook on its sauce); remove and set aside.

Prepare the Gravy

In the same pan, heat 2 tbsp butter with 1 tbsp oil.
Add the onions and sauté until golden brown.
Finally, add a tablespoon of ginger-garlic paste. Provide sautés for a minute.

Combine with Chicken: Gravy

Combine the gravy with chicken pieces that have been sauteed beforehand.
Then simmer, close it, and let it be on a low flame for 10-15 minutes to cook the chicken thoroughly.

Add Final Touches

Add fresh cream, garam masala, and kasuri methi.
One may need honey or sugar to adjust to taste
Let it simmer for a further 2-3 minutes.

Dress and Serve:

Garnished with fresh coriander.
Served hot with naan, roti, or steamed basmati rice.
